Cauliflower and cheddar soup

Ingredients
3 tbs unsalted butter 1 med yellow onion1 med head cauliflower4 cups chicken broth1 1/2 cup cheddar cheese salt and pepper to taste
Directions
saute onions until tender, cut cauliflower in small pieces add and cook until browned....add chicken broth boil 20 mins......puree in blender return to pot and add cheese
