Paleo Frittata

3 Sweet Potatoes (sliced)3 Zucchini, yellow & green (sliced)8oz Mushrooms (sliced)1 Onion (chopped)1/2 Red Bell Pepper (deseeded, chopped)1/2 cup grapeseed oil1 lb ground pork1 cup goats milk12 medium eggs
Preheat oven to 375
Brown the pork, remove from skillet.
Sautee (or steam) the sliced veggies.
Mix into 12"x8" pyrex casserole dish, adding salt/pepper/spices to taste.
Crack 12 eggs, add 1 cup goats milk, beat until frothy.
Pour eggs over veggies
Put pyrex in 375 oven for 20-30 minutes until eggs are set.
Remove to cool, then slice
Serving Size: makes 6 4" square pieces
