½ cup fine cornmeal2 cups flour1 2/3 cups fresh breadcrumbs½ teaspoon of coarse salt3 eggs¼ cup olive oil2 cups milk5 tbsp honey1 lb peeled, cored and diced firm apples3.5 oz diced dried figs3.5 oz raisinsgrated zest of 1 lemongrated zest of 1 orange
Preheat oven to 325°F. Grease a 9x13” baking dish.
Blend the cornmeal, flour, breadcrumbs, salt, eggs and oil.
Blend in the milk and honey, stirring well.
Add the diced apples, figs, raisins and grated peel, folding in gently.
Bake 50 to 60 minutes.
