Quick Tomato Sauce

Ingredients
2 Tb. extra virgin olive oil1 large onion, diced4 cloves garlic, minced2 (28 oz.) cans crushed tomatoes1/4 cup grated carrots2 Tb. oregano1 Tb. basil1 Tb. parsley2 cups chopped fresh spinach (or 1 package frozen, thawed & drained) - Optional
Directions
In food processor, pulse onions, garlic and spinach until chopped, or chop by hand. Saute onions, garlic & spinach in olive oil until onions are tender. Add 2 cans of crushed tomatoes, 1/4 grated carrots, oregano, basil & parsley. Bring to boil, then immediately turn heat down to low. Simmer for at least 30 minutes, more if you have the time. Ready to serve.
