Best Scrambled Tofu

1 block medium or firm tofu (I use firm)1-2 tsp garlic powder2 tbsp nutritional yeast1 tbsp lite soy sauce (or tamari)1/2 tsp turmeric1/4 tsp basil1 tsp sage1/4 tsp black pepper1-2 tsp dijon mustard1 cup chopped carrots (my favorite add in)other add-in suggestions: tomatoes, onions, peppers, celery, salsa, spinach, whatever!
Crumble tofu into a bowl and mix well with all spices, including soy sauce (do not mix in carrots).
Spray a large nonstick skillet with nonstick spray and set to medium-high heat.
Add tofu to skillet and let sit, stirring occasionally, for approx. 10 minutes, or until tofu has lost ALL it's water and is starting to brown. Add in carrots/other veggies near the very end of this process. Enjoy!
