Parmesan Garlic Mashed Potatoes

4 cups diced potatoes1/2 cup low sodium fat free chicken broth4 tablespoons shredded Parmesan cheese4 cloves garlic, grated1/2 teaspoon saltFreshly cracked pepper to taste (I like 1/2 teaspoon)
Place potatoes in saucepan. Add enough water to just cover potatoes. Add 1/2 teaspoon salt. Cover. Bring to a boil over high heat. Reduce heat to medium low and stir. Place lid at a slant so pan doesn't boil over. Cook 10-15 minutes until potatoes are fork tender. Turn heat off and drain potatoes. Place in a bowl and mash with potato masher to desired consistency. Add broth, garlic, Parmesan and freshly cracked pepper. Use masher to combine. Serve
