Huevos Rancheros

Ingredients
2 large fresh eggs, beaten2 Tbsp sweet red peppers finely diced2 Tbsp green bell peppers " "2 Tbsp Onions finely chopped1/2 Cup Fresh Baby Spinach1 Spray of Pam1/4 Cup Mild Chunky Salsa
Directions
Saute onions and peppers in a non-stick fry pan sprayed with Pam. When onions are transparent, add the spinach and cook until spinach is wilted.
Beat 2 eggs and add to fry pan. Flip over one side when the sides start to firm up. Ease onto a plate.
Add Salsa to the fry pan to worm - pour over omlette.
