Holiday Quinoa Salad

Ingredients
2 cups water1 cup quinoa, rinsed1 cup pomegranate arils1 cup cucumber in 1/4 inch dice1/2 cup chopped green pepper in 1/4 inch dice1/2 cup chopped green onions (incl green parts)3/4 cup finely chopped parsley1/2 cup chopped cilantro1/4 cup finely chopped mint leaves1/4 cup lemon juice1/4 cup extra-virgin olive oil1 tsp sea saltfreshly ground pepper to taste
Directions
Bring water to boil on high heat. Stir in quinoa. Return to boil. Turn heat to medium-low. Cover and smmer 15 to 20 minutes or until water absorbed and quinoa is tender but chewy. Remove cover. fluff. Cool to room temperature.

Put 2 cups of quinoa in large bowl. Reserve remainder for another salad or side dish. Add pomegranate, cucumber, green pepper, green onions, parsley, cilantro and mint. Toss gently.

In large measuring cup whisk together lemon juice, oil, salt and pepper. Pour over quinoa mixture. Toss gently to combine.
