Cream Cheese and Chicken Crock Pot Meal

Ingredients
2 Skinless, Boneless and Frozen Chicken Breasts1 8 oz package of low fat cream cheese1 Packet of Ranch Dressing Mix1 Can of Black Beans, rinsed and drained1 small can of yellow sweet corn1 Can of Rotel (mild or spicy).5 Tbsp of Chile Powder
Directions
Place frozen chicken breasts in crock pot. Pour entire cans of rotel and corn on top (do not drain these two ingredients). Pour drained and rinsed black beans on top. Pour Ranch Dressing Mix and Chile powder on top. Mix this well, Place entire 8 oz of Cream Cheese over chicken. Turn Crock Pot on low for 6-8 ours. Shred the chicken with a fork when cooking is complete. Serve over rice.

Serving Size: Makes 4 large servings (for smaller appetites could easily make 6)
