Curry Butternut Squash

Ingredients
3-4 lbs. Butternut squash1 bunch green onions1 tsp. cumin1 tbsp. curry powder1 tsp. red curry paste2 tbsp. tomato sauce1 can coconut milk1 tbsp. brown sugar2 tbsp. soy sauce or 3 tbsp. fish sauce1 tbsp. oil - coconut is best3 cloves of garlic5 fresh basil leaves
Directions
Mix everything but squash together in dutch oven, add squash and boil

    Since I was making just one serving for myself, I had to adjust the proportions. However the basic ingredients were there. It was delicious. I served it over riced cauliflower. - 9/12/18
