Old El Paso Enchiladas (No Tortilla)

1 Old El Paso Enchilada Dinner Kit1 lb boneless, skinless chicken breast1 cup diced tomatoes6 ozs of Velveeta Queso blanco, sliced1 tbsp Extra Virgin Olive OilFresh ParsleySalt and Pepper to taste
Cut chicken up very small, into bite-sized pieces. Season lightly with salt and pepper, to taste.
Add 1 tbsp olive oil to skillet. Heat oil, then add chicken. cook until no longer pink. Add seasoning mix from kit and 1/2 cup of water. Stir until sauce is thickened.
Once fully cooked, add cheese and allow it to melt (covering it with a lid should help the process along.
Spoon 1/4 mixture onto plate. Pour 1/4 cup of enchilada sauce on top. Top with tomatoes. Add a sprig of fresh parsley for garnish
