Scrambled Egg, 2 large Spinach, fresh, 3 leaf (chopped)Carrots, raw, .25 cup, grated Basil, 1 leaves (1 tsp dry)Garlic, .5 tsp (half a tsp)Onions, raw, 1 tbsp chopped Margarine, soft, 1 tsp Cheddar Cheese, .125 cup, shredded (just a pinch really)
Place butter, onion, garlic and basil in a small saute pan over med heat. Whisk eggs in a small bowl. When onions begin caramelizing pour eggs into pan along with carrots, spinach and tomatoes. cook as you would regular scramble eggs, softly turning to cook fully. When just about done sprinkle cheese on and softly turn a few more times till done cooking eggs. Place on a plate and enjoy. Served with a slice of 15 grain toast with cinnamon butter is a great finish to a well rounded breakfast.
