Apple Blueberry and Cinnamon Flaugnarde

Ingredients
0.5 tsp Sunflower Oil150 g Apples with skin (e.g. one medium Bramley) 2 tsp Sugar 0.5 tsp Cinnamon, ground30 g Plain Flour 2 medium Egg, fresh50 ml Milk, semi-skimmed5 grams Butter, salted20 grams Blueberries
Directions
Heat the sunflower oil in an 18-20cm omelette pan over a medium heat.
Slice the apples thinly and add to the pan, sprinkling over 1 tsp of sugar and the cinnamon.
Meanwhile beat together the flour, eggs, 1 tsp sugar and the milk in a jug. Stir in the blueberries.
When the apples are browned and starting to break up a little, slide them onto a plate.
Heat the butter (about 1/2 tsp) in the same pan and pour in the batter. It will be like a very thick pancake. After 3-4 mins, turn (the top will still be very runny, the bottom cooked) and place the apples on top.
After 3 mins fold half of the flan over the filling and continue cooking for 2-3 mins.
Plate up and serve.

Serving Size: Makes one substantial 20cm flan. Serves one, or two with greek yoghurt on the side.
