Voodoo Enchiladas

Ingredients
1/4 c onion, chopped1/4 c green onions, chopped6 oz boneless, skinless chicken breast1/2 c fat-free shredded cheddar cheese1/2 c + 2 tbsp green enchilada sauce2 whole wheat 98% fat free tortillas1 tbsp fat-free sour cream1 tbsp Penzeys Arizona Dreaming spice
Directions
Preheat oven to 400'.

Cook onion in skillet over medium-high heat for 2 minutes.

Add chicken, 1/4 c cheese, 2 tbsp enchilada sauce to onions in bowl.

Heat tortillas in microwave for 20 seconds. Put chicken mix in each tortilla and place tortillas in baking pan.

Pour 1/2 c enchilada sauce over enchiladas. Bake for 10 minutes.

Sprinkle 1/4 c cheese over enchiladas. Bake for 2 more minutes. Top with sour cream and green onions.

Serving Size: Makes 2 enchiladas
