Head Cauliflower cut into florets1 medium onion, chopped2 cloves garlic, minced1tbsp thyme, minced 32 oz box Vegetable Broth1 tbsp EVOO1.5 cup aged white cheddar, shredded6 slices turkey bacon
Preheat oven to 400. Toss caulifowwr florets with EVOO and roast in oven 20-30 min until it starts to brown. Meanwhile, cook bacon in skillet. Remove and set aside to cool. Add onion, garlic, and thyme to skillet and cook until fragrant and onion starts to soften. In medium stockpot, add onion mixture, roasted cauliflower and vegetable broth. Bring to a boil, reduce heat and simmer 20 minutes. Remove from heat and blend with emmulsion blender until smooth. Add cheddar and chopped bacon and stir through.
