Split Pea Soup

Ingredients
* Split Peas, 2.33 cup * Olive Oil, 2 tbsp * Onions, raw, 1 cup, chopped * Garlic, 6 cloves * Celery, raw, 6 strip (4" long) * Carrots, raw, 1 cup, chopped * Chicken stock, home-prepared, 4 cup * *Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.)4 cups of water
Directions
Heat oil on medium heat for 1-2 minutes, sautee onions, garlic, and celery until onions are clear. Add carrots and potatoes and sautee for 3 minutes. Add chicken stock, water, and split peas. Cook on medium heat for 45 minutes. Serve hot. Makes 8 1 1/2 to 2 cup servings.
