Fruit Muesli with Berries

Sprinkle lemon juice over the grated apple to prevent browning.
In a large bowl, combine oatmeal, peaches, grated apple, yogurt, vanilla, and apple juice. Mix well. Cover and refrigerate overnight.
In the morning, serve muesli topped with berries and nuts. Store covered in refrigerator up to four days.

2 c uncooked oatmeal (old fashioned is best) 2 large coarsely chopped peaches (or 2 c thawed frozen peach slices) 1 apple, peeled, cored, and coarsely grated 1 Tbsp lemon juice 1 c apple juice 1 c plain non-fat yogurt 1/2 tsp vanilla extract 1 c mixed berries - blueberries, raspberries, strawberries, etc.1/2 c chopped pecans or almonds
