Ingredients
1 pound flour1 cup warm water2 TBS sugar1 TBS yeast
Directions
Dissolve the yeast and sugar in the water and set aside for a few minutes.
Mix with the flour for five minutes, then let rest for ten minutes.
Mix again very briefly to know out the air, then place dough in an oiled bowl in the top half of a (turned off) oven.
In the bottom of the oven, place a casserole dish with boiling water. Let the dough steam rise for two hours.
Turn dough out onto floured surface and punch down with a fist. Fold dough into thirds and punch down again. Fold into thirds once more, and punch down again.
Leave for ten minutes to rise slightly, then punch down for the last time.
Roll dough into a cylinder and place in oiled 1lb loaf tin. Cover with clean tea towel and leave to rise for one hour.
Place dough into a preheated 350 degree oven, for 25 - 35 minutes until brown on top and smelling lovely!
