Easy Beef & Cheese Casserole

Ingredients
12 oz. 80/20 ground chuck1/2 cup bell pepper, chopped1 small onion, chopped1 1/2 tsp. minced garlic1 tsp. jalapeno, chopped1/2 tsp. Salt1/2 tsp. Ground Black Pepper1 can Diced Tomatoes1 cup Brown Rice, ready to serve cup2 cups Sharp Cheddar Cheese, shredded
Directions
In medium skillet, brown together beef, bell pepper, onion, garlic, jalapeno, salt and pepper. Pour out onto paper towels to drain liquids. Heat in skillet the canned tomatoes and brown rice, then add back the beef mixture; mix well. Using a medium casserole dish, layer the beef mixture and the sharp cheddar cheese, ending with cheese on top. Bake in 375 degree oven for approx. 15 minutes, or until cheese is melted well and mixture is bubbly.
