Whole Wheat Burger Buns

1 1/2 cups hot water1/3 cup oil1/3 cup honey2 tsp salt1 egg (or 2 tbsp ground flax meal in 3 tbsp water)2 tbsp lecithin4-4 1/2 cups whole wheat flour1/2 cups flax seed, ground in blender (optional)1 tbsp yeast
Combine water, oil, honey, salt, and egg or egg replacer. Add lecithin, gluten (if using), half of flour, and ground flax seed (if using). Mix thoroughly. Add yeast and enough flour to make a soft dough. Knead until smooth and elastic (about 5-6 minutes). Let rise until double. Shape as desired and let rise again until double. Divide dough into 12-13 balls. Shape, rise and bake at 400F for 10-12 minutes.
