Stuffed Zucchini Cups with Veggies, Pasta & Sauce

Ingredients
* Ground beef, lean, 1 pound * Bread crumbs, dry, grated, seasoned, 1/3 cup * Oregano, ground, 1 tsp * Basil, 1 tsp * Garlic, 3 clove, crushed and minced * Egg, fresh, 1 large * Onion - Raw, chopped, 1 cup * Bell Pepper, Green - 1 Cup, Chopped, 1 cup * Zucchini, 1 large (1-1/2 pounds) * Hunt's Pasta Sauce Italian Sausage flavored, 24 ounces * Broccoli, fresh, 3 cup, chopped * Spinach, fresh, 1/2 pound * Mushrooms, fresh, 1 cup, pieces or slices * Olive Oil - 1/2 tsp * White Wine,1/4 cup * Pasta, cooked, 1-1/2 cups
Directions
Mix ground beef, bread crumbs, oregano, basil, garlic, egg - set aside; cut large zucchini crosswise into 12 discs; hollow out seed area to form cups. Divide ground beef mixture into 12 portions and stuff discs. Cook pasta according to package directions, drain well and rinse lightly, set aside; reserve 1/3 pasta water. Place zucchini cups in baking dish (lightly spray with non-stick coating). Cover with pasta sauce, 1/4 cup wine, 1/3 cup pasta water; bake at 350 degrees F for 45 minutes. Meanwhile, steam or microwave spinach and broccoli until tender and set aside. Saute mushrooms in olive oil; mix with spinach and broccoli. To serve -1/2 cup pasta, large serving of spinach-broccoli-mushrooms, 2 zucchini cups on top, 1/2 cup sauce.
