Quiche Cups

4 cups egg beaters1 cup reduced fat kefir1 cup fat free greek yogurt1 cup low fat swiss cheese grated1/2 cup parmesan cheese grated1 10oz package fresh baby spinach1 cup chopped bell pepper1/2 cup chopped green onion1/4 cup extra virgin olive oil1/2 tsp ground black pepper1/4 tsp ground nutmeg
Pre heat oven to 375
Sauté onion, garlic, and peppers in the olive oil until semi soft.
Coarsely chop and wilt the spinach in the vegetable mix.
In a large bowl, mix the eggs, cheese, black pepper and nutmeg.
Combine the vegetables and the egg mixture.
Use cooking spray to oil 18 foil cupcake baking cups and cupcake tin.
Ladle mixture into the cups and bake for 30 minutes until puffed and brown.
Serving Size: Makes 18 cup cake size quiches. 2-per serving
