3 cups cooked quinoa (1 cp dry)1 cup cooked boccoli small florets1 cup cooked and finely chopped carrots1 cup cooked chopped asparagus1 cup finely chopped celery1/2 cup chopped onions (preferably red)3 Tbs fresh Cilantro, chopped1/4 cup cider vinegar1 Tbs Olive Oil2 tsp garlic powder Salt to tastePepper to taste
Serving Size: Makes 8 1-cup servings
Cook quinoa following instructions on pakage (one cup dry will yield about 3 cups cooked, which is what is needed for this recipe). Once quinoa is cooled mix with all the rest of the ingredients. Refrigerate for about 1 hour to let the flavors blend.
