Ingredients

30 Large Eggs
4 cups (2 cans) Black Beans
1 package (about 12 tsp) Taco Seasoning
2 cups Shredded Cheddar Cheese
30 Medium Tortillas
Salsa as garnish (1 tbsp per burrito)
Directions
In a large bowl, scramble 30 eggs. Also, drain your black beans.
Meanwhile, spray a large skillet with nonstick spray and preheat. Add the scrambled eggs, taco seasoning and black beans. Cook until done.
Put 1/3 cup of the egg mixture onto a tortilla. Garnish with cheese and salsa, then roll up and set aside. Eat now or individually freeze for later.

Breakfast tacos/Burritos are a great meal for a crowd as this recipe illustrates. One suggestion is to add salsa into the recipe list, as it is counted in the calories. Also, so you drain your beans, or put in the liquid as well? - 3/16/09

That's a good idea about adding the salsa. Also I drain the beans before I add them to the pan.
