Ingredients

    Egg, fresh, 4 extra large scrambled
    *Potato, raw, 2 large (3" to 4-1/4" dia.) peeled and diced
    Onions, raw, 1 cup, chopped
    *Canola Oil, 1 cup for frying
    Salt, .5 tsp to taste

Directions

peel and chop potato & onion.
Heat one cup oil and fry potato and onion until golden. I bowl scramble eggs. With slit spacula drain potato & onion mixture and place in egg (drain as much oil as possible. Discard all oil from frying pan just leave coating. Mix potatos & onion with egg so that all is covered then place back in pan reduce heat and cover for 5 minutes. Uncover and with large plate over pan flip over and slide back in pan for 5 more minuted covered.
slide onto plate and cut into 4 pieces.

    Very Good
    try this combined with gazpacho. It's a summer classic dinner in Spain! (or at least in my family)

    I love this, and make it all of the time. You can also add green peppers, shrimp, broiled chicken or whatever you want. I also add garlic powder and fresh garlic, yummy. - 1/9/11
