Easy Gumbo

8 oz low fat smoked sausage8 oz diced chicken breast8 oz peeled shrimp1/2 cup green pepper, chopped1/2 cup onion, chopped1/2 cup celery, diced2 cups diced tomatoes, no salt added2 cups prepared brown rice2 cups low sodium chicken chicken broth1 tbsp garlic powder1/2 tsp cayenne pepper
Add peppers, onions, celery and tomatoes to pot.
Slice smoked sausage and add to pot.
Add chicken breast to pot.
Add prepared rice and chicken broth to pot.
Add seasonings.
Boil on med-hi for five minutes.
Reduce heat and cook on low for 25 minutes.
Add shrimp last three minutes of cooking.

OUTOFIDEAS
Many of us in the south make gumbo w/o okra. The secret of a good gumbo is a smoky roux, the flour and fat paste browned slowly over low heat. It can be done with olive oil and whole grain flour. I also use thyme and "shrimp boil"; & yes, we do use sausage and shrimp in the same pot! Pour over rice. - 3/4/08

this isn't a gumbo....you have to make a roux!
secondly...you would almost never put seafood in the same gumbo as chicken and sausage. You can make real "gumbo" healthy...but this is more like a heavily protein dense soup! I would have used water instead of chicken broth...if you have the roux - 3/11/08
