Vegan Lentil Stew

Ingredients
1 tbsp vegetable oil1 yellow onion, chopped2 carrots, chopped8 cups vegetable broth2 cups dry lentils1/4 cup freshly squeezed lemon juice1 tbsp garlic powder (NOT garlic salt)1 tbsp onion flakes
Directions
In a large pot, heat your olive oil. Add onions and carrots, and sautée until the onions are translucent. Add lentils, veggie broth, lemon juice, garlic powder, and onion flakes.

Bring to a simmer, and then cover. Cook for 45 minutes, and then uncover and cook for half an hour. When most of the liquid has boiled down, the stew is ready. Add more seasoning to taste.
