Ricotta Cheese Pancakes

Ingredients
4 egg whites (large eggs), beaten1 cup of fat free ricotta cheese1/4 cup rice flour1/8 cup potato starch flour1/4 tsp baking powder1 tbsp canola oil
Directions
Place egg whites, cheese, flours, baking powder, and canola oil in a large mixing bowl. Beat with electric mixer until well blended.
Heat a large nonstick skillet over medium heat. Pour about 1/4 cup of batter and cook until golden brown, 2-3 mins per side. Serve at once.
Makes about 8 small pancakes.

    Not bad, added vanilla to batter for extra flavor and topped with syrup. Pretty good actually, perhaps will keep you feeling full longer than regular pancakes because of the ricotta cheese. - 1/24/08
