Mandy's Muffins

Ingredients
1 Cup Milk1 Cup Quick Oats1/4 Cup Applesauce1 Egg1 Cup Whole Wheat Flour1/4 Cup Flax1/4 Cup Honey2 Tsp Baking Powder1/2 Tsp Salt
Directions
1. Preheat oven to 350 F.
2. In small bowl, combine milk and oats. Let sit for 15 minutes.
3. In a seperate bowl, beat eggs and applesauce; stir in oatmeal mixture. Mix in remaining ingredients until just combined.
4. Spoon batter into prepared muffin tin to 2/3 full.
5. Bake in preheated oven for 20 minutes, or until toothpick inserted into center of muffin comes out clean.
