Pasta Free Spaghetti and meat sauce

2 cans plum tomatoes pureed 1 6oz can tomatoe paste1 bulb roasted garlic (approx 8 cloves)1 cup chopped onions1 cup chopped red peppers2 cups chopped spinach1 cup diced mushrooms3/4 cup grated carrots2 tbsp ground oregano2 tbsp ground thyme2 oz grated romano cheese1 pound extra lean ground turkey1 2lbs spaghetti squash
*cut squash in half, remove seeds, place face down on cookie sheet with 1/2 cup salted water and bake in over for 60 mins
*add remaining ingredients into a large saucepan, including raw ground turkey and bring to gentle boil then lower heat and simmer on low heat for 60 minutes
* once squash is cooked use a fork to scrap out squash (has spaghetti texture and look) spoon it into the sauce and cook for another 5-10 minutes
serve and enjoy !
Serving Size: divide into 6 portions, freezes well
