Lentil Soup

6 cups low sodium chicken/vegetable broth1 cup lentils, washed1 cup diced tomatoes (canned)1 onion - diced1 clove garlic, choppedolive oilsaltpepperbay leafthyme (sprig or loose dried)*
In large saucepan, combine broth, lentils, tomatoes, bay leaf and thyme. Sprinkle w/salt & pepper. Bring to boil and reduce heat to low and simmer for 30 minutes.
Meanwhile heat oil in a skillet and cook onion until soft (4 min or so) and then add garlic and cook 1 additional minute. Turn off heat and set aside.
Once lentils are soft, remove bay leaf & thyme turn off heat and add onion mixture.
Ready to eat!
