Pumpkin Raisin Spice Muffins

Ingredients
1+1/2 cups all-purpose flour.1 tsp baking powder.1 tsp baking soda.1/2 tsp salt.1 tsp cinnamon.1/2 tsp nutmeg.1 tsp ginger.1/4 tsp cloves.1/4 tsp mace.1/2 cup raisins.1 egg.1/4 cup granulated sugar.1/3 cup Canola oil.1 cup pumpkin puree.1/2 cup milk.
Directions
Pre-heat oven to 400 'F.

1) In a large bowl, mix the flour, baking powder, baking soda, salt, and the spices.
2) Mix the raisins in with the flour mixture.
3) In a medium bowl, whisk the egg until it starts to get frothy. Add the sugar, oil, pumpkin puree, and milk. Blend well.
4) Pour the wet ingredients into the bowl with the dry ingredients. Mix until everything is just wet. (do not over mix)
5) Grease a 12 muffin muffin pan, and divide the batter equally into each of the muffin cups. Tap the pan on the counter, to level the batter, and make sure there are no big air holes in the muffins.
6) Bake in a 400 'F pre-heated oven, for 20-24 minutes, or until done.
7) Once done, carefully remove the muffins from the baking tin, and place onto a rack to cool. When they are cool, store them in an airtight container.

Serving Size: makes 12 medium size muffins.
