Sweet & Spicy Vegetable Soup

Ingredients
1 Cup water1 Large whole tomatoe1Medium carrot1Medium potatoe1Cup collards1 Cup Zucchini1 Medium onion1 tsp Black pepperDash hot pepper sauceSalt optional
Directions
Slice and dice clean vegetables with or without the skins (your choice) I scraped my carrot and peeled my potatoe, zucchini and onion .
Mix all ingrediants in a 1 quart saucepan. Bring to a rolling boil for about 5 minutes, then lower heat to simmer for about 15 minutes or until broth is somewhat thick. Watch closely stirring occasionaly. Add salt if you desire.

Makes about 3-1 cup servings
