Creamy Crockpot Potato Soup

3 lbs. potatoes, cleaned and diced 2-3 carrots, peeled and grated1 medium onion, diced2 stalks of celery, diced2-3 cloves of garlic, minced6 c. chicken stock2 c. milk (I used 2%)1/4 c. all-purpose floursalt and pepper to taste
Place all vegetables and chicken stock into a 6 qt. slow cooker on high heat. Cook on high for 6-8 hours or until all the vegetables are softened and will mash easily. With a potato masher or an immersion blender, blend the potatoes and vegetables into the broth. Whisk the milk and the flour together and add to the broth, stirring to incorporate. Allow to cook on high heat for another 20-30 minutes. Soup should thickened. Add salt and pepper to taste and top with whatever toppings you would like: cheese, ham, bacon, green onions, etc. Delicious on its own as well!
