Zucchini Soup

1 Brown Onion4 Large Zucchinis (8 cups cut into pieces)2 Medium Potatoes4 cubes or tsp Chicken or vegetable bouillon8 cups water1/2 to 1 tbs Herbes de Provences1 tsp black peppper1 tsp fresh thyme
Chop and brown onion
Cut Zucchini and potatoes in small pieces and add to onions.
Cover with 8 cups of water
Add bouillon and spices. Add spices if needed.
Bring to a boil, reduce heat to low and cover. Simmer for 1 hour or until vegetables are tender.
If desired, blend soup to creamy texture.
Serving Size: 8
