Pork Lo Mein

Ingredients
1T corn starch1t ground ginger1/4 C reduced sodium soy sauce2T reduced sodium chicken broth1 1/2 lb. pork tenderloin, sliced thinly1 chicken boullion cube dissolved in 1/2 C hot water8 ounces uncooked linguini1/2 lb. fresh sliced mushrooms1/4 lb. fresh snow peas1large sweet red pepper, julienned2 green onions, chop in 2" pieces1 to 2 T canola oil2 t sesame oil
Directions
Combine cornstarch, ginger, soy sauce and broth in large bowl. Add sliced tenderloin ( chicken breast is great too) set aside.

1T canola oil in large skillet , Sauté fresh veggies listed about 3 -5minutes, remove and set aside.

Sauté meat mixture 2 - 3 minutes til no longer pink, add boullion mixture, bring to boil til thickens a little (you can eliminate the 2nd T of canola oil for the meat if non stick pan)

So yummy!

Return veggies to pan

Add cooked/drained linguini and sesame oil, toss and heat through about 2 minutes.
