Easy Huevos Rancheros

Ingredients
1 can of diced tomatoes 1 can of diced green chiles3 T of chopped onion3 T of chopped green pepper4 Large Eggs6 corn tortillas2 T oilsalt and pepper to taste
Directions
Add just a tiny bit of oil to a frying pan and saute the onion and green pepper. When they begin to soften add canned tomatoes and chiles (do not drain first). Bring mixture to a simmer.

Make "holes" in the mixture so that you have 4 indentations. Break eggs into the holes. Allow to cook at a simmer until eggs begin to set, then turn eggs over.

While eggs are cooking heat remaining oil in a separate pan and cook tortillas.

Break up eggs after they have set. Once eggs are fully cooked, spoon mixture onto a tortilla and enjoy. Can be topped with shredded cheese.
