Mexican Bake - Vegetarian - Low Calorie

12 sonoma organic corn tortillas38oz jar of kirkland salsa6oz block of cheddar cheese or colby jack (reduced fat) - shredded2 cans of black beans (20oz)10 oz bag of frozen organic sweet corn 4 green onions chopped4 plum tomatoes chopped2 cups shredded carrots2 cups shredded kale1 cup dry quinoa (2 cups cooked)
cook quinoa to directions (set aside to cool)
mix together in a bowl all ingredients (including quinoa) except tortillas - save 1/2 the cheese for the top and 1/2 cup salsa
spread layer of salsa on bottom of 9x12 pan
layer tortillas
layer mixture
repeat until ending with mixture
use reserved cheese to layer on top
cover with tinfoil and bake at 400 for 40min
then 10-15 not covered to brown the cheese
