Amazing Vegetable Soup

2 quarts V8 Juice (8 cups)1 10 oz bag shredded cabbage10 7-8" celery stalks, sliced1 onion, chopped5 garlic cloves1 cup fresh green beans, cut into 2" pieces1 medium zucchini, sliced and quartered1 medium summer squash, chunked1 15-oz can Diced Tomatoes (original recipe says to drain but I leave the juice in)1 14.5-oz Navy Beans canned, rinsed and drainedParmesan Cheese - optional garnish (not in nutrition info)Basil Pesto - optional garnish (not in nutrition info)
1. Combine broth, cabbage, celery, onion, garlic and green beans in stock pot. Bring to a boil, reduce heat and simmer until green beans are just tender.
2. Add tomatoes, zucchini, summer squash and navy beans. Cook an additional 45 minutes.
3. Serve hot, sprinkled with Parmesan cheese or with a spoonful of pesto stirred in if desired.
