Wheat berry salad

1 ½ cups cooked and cooled wheat berries1 cup chopped plum tomato¾ cup peeled and chopped cucumber¼ cup green onions, chopped¼ cup chopped fresh parsley1 ½ Tbsp olive oil1 Tbsp white wine vinegar½ tsp Dijon mustard¼ tsp salt, or to taste½ cup crumbled feta cheese
Method of Preparation:
In a large howl, toss together the wheat berries, tomatoes, cucumber, green onions, and parsley.
In a small bowl, stir together the oil, vinegar, mustard, and salt. Pour the dressing over the salad and toss to combine.
Sprinkle the cheese over the salad and toss again.
Serving Size: about ½ cup
