*Quinoa, 16 oz box *Lime Juice, 1 cup *onion scallion, spring chopped .50 cup *Fresh Parsley, .50 cup *Fresh Mint, .50 cup *Currant fresh, 2 cups *1 cup pomegranate seeds, when in season
Prepare quinoa according to the directions on the package. Place in large bowl and allow to cool. Pour over the lime juice, add the zest of the lime, scallions, parsley, mint, currants and pomegranate seeds and mix well. Chill.
