Cucumber and Shallot Salad

Ingredients
1 English Cucumber sliced as thinly as possible1 large Shallot sliced as thinly as possible1/4 c Nakano Seasoned Rice Vinegar
Directions
Mix all ingredients and refrigerate for an hour. Use as garnish to perk up a meal of steamed veggies and grilled chicken, use in place of relish on a sandwich or eat as is. Actual calorie count is lower as consumed, as it counts 80 calories for the rice vinegar, but you don't actually consume all of it.

**You must really like vinegar to enjoy this!!**
