Southwest Black Bean Soup

Ingredients
1 Tbsp Olive or Canola Oil1 Med Onion (chopped)2 Cloves Garlic (crushed)1 to 2 Jalapeno Chilis seeded and finely chopped (if desired)2 cans (about 4 cups) Black Beans1 can Fire Roasted Tomatoes (undrained)4 to 6 cups Vegetable Broth (low or no sodium)2 Tbsp ground cumin2 Tbsp Cilantrolow-fat yogurt or sour cream (if desired) for garnishLime wedges for taste (if desired)**I also add 2 cans of red kidney beans for extra fiber!
Directions
Cook onion in olive or canola oil until transparent. Add all other ingredients to stock pot and then the onion when transparent. You may want to add extra cumin and/or cilantro to taste. Cook approximately 30 to 45 minutes.
