2 cups whole wheat flour1 cup sugar2 tsp baking soda2 tsp pumpkin pie spice1 carrot, grated2/3 cup dried cranberries2/3 cup chocolate chips2 ripe bananas, mashed well3 eggs, beaten1 cup canola oil1 Tbsp maple syrup
In a large mixing bowl, sift together first four ingredients. Add carrots, cranberries, and chips gently. In a smaller bowl, combine eggs, oil, syrup, and bananas. Using a large spatula, fold wet ingredients into dry ones, just enough to be moistened. You should still see dry lumps. Use a nonstick cooking spray to grease both an ice cream scoop and your baking pan. Scoop batter equally into 24 muffin cups, bake at 350 for 15-17min, until your toothpick comes out clean.
