French Apple Tart

1 refrigerated Pillsbury Pie Crust1/4 cup Sugar1/2 tsp Cinnamon2 lbs thin sliced Granny Smith Apples2 1/2 tbsp Honey (orange blossom is best)1/2 tsp Vanilla Extract
Preheat the oven to 425 degrees. Place dough on floured surface and roll out to 12 inches. Place on a round cookie sheet.
Combine sugar and cinnamon. Sprinkle half of this mixture over the dough.
Arrange apple slices in circular, overlapping pattern around the dough working your way into the middle. Sprinkle the remaining sugar and cinnamon mixture on top of the apples. Place in the oven and bake for 30 minutes. Remove from oven.
Combine the honey and vanilla in a microwave safe bowl and microwave for 40 seconds until runny. Brush over the warm tart. Slice to serve.
