Chicken Breast, no skin, 24 ounces*Diced Tomatoes w/ Lime Juice & Cilantro (Rotel), 1.2 cupBeans, black, 2 cupYellow Sweet Corn, Frozen, 1 cup kernelsCilantro, raw, 5 tbsp, chopped*Chicken Broth 99% Fat Free (Great Value), 2 cupScallions, raw, 3 medium (4-1/8" long), choppedGarlic powder, 1 tbsp*Onion powder, 1 tbsp*1/2 tsp. Cumin Powder, 2 serving*Cayenne Pepper, 1 tsp
Directions
1.Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot.
2.Season chicken breast with salt and lay on top.
3.Cook on low for 10 hours or on high for 6 hours.
4.Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning.
Serving Size: Makes 8 1-cup servings
