Grandma's beef stew

Ingredients
2 tbsp cooking oil (I use safflower)2 tbsp flour (I use King Arthur Gluten Free all-purpose flour)1 onion, diced3 pounds extra-lean stew beef (top round)2 pounds baby carrots2-3 pounds red potatoes, skin-on, cut into halves/quartersKosher salt (to taste)Gravy master (to taste)
Directions
Heat oil in large pot.
Place salt and flour into ziploc bag, add beef, and toss to coat.
Add beef and onions to heated oil in pot and brown.
Add water just to cover meat and simmer 20 minutes.
Add carrots to pot. Add water just to cover, and simmer 20 minutes.
Add potatoes to pot. Add water just to cover, and simmer 20 minutes.
Add salt and Gravy Master to taste.
