Light Taco Casserole

Ingredients
Ground beef, extra lean, 12 oz Onions, raw, .5 cup, chopped Garlic, 1 clove Del Monte Petite Cut Diced Tomatoes, 1-15 oz can Beans, pinto, 1-15 oz can, well drained and rinsedYellow Sweet Corn, Frozen, 1 cup kernels Lawry’s Taco Seasoning, 6 tsp Cauliflower, raw, 3 cups Kraft 2% Shredded Cheddar Cheese, 2/3 cup
Directions
brown ground beef with onions and garlic. While meat is browning, wash and cut up cauliflower into bite-sized pieces. Place in microwave safe bowl , cover with plastic wrap and cook on high for 3 mins. Remove meat from heat and drain well or put in colander and rinse. Put meat in large pot, add tomatoes, corn and beans. Stir in Taco seasoning and Cauliflower. Stir well to blend. Cook for 20 mins. over med. heat, stirring frequently. Serve in individual bowls, top with 2 Tbsp. shredded cheese for each bowl. If desired, add 1 Tbsp fat free sour cream . Serve hot.
