Arroz con Pollo

Ingredients
2 t olive oil1 1/2 lb boneless skinless chicken breasts1 med onion, chopped2 cloves garlic, pressed2 c tomatoes, chopped2 c water1t dried oregano1t dried thyme1t paprika1/2 t salt1/4 t black pepper1/8 t saffron1 c uncooked brown rice1 c frozen peas
Directions
Preheat oven to 350 degrees. Heat oil on stovetop in an oven proof skillet or dutch oven. Brown chicken in skillet (about 2 min per side) then remove to plate. Add onion and garlic to skillet, saute about 2 min. Add water and tomatoes and stir well (scraping bottom of pan). Add all spices. Bring to a simmer, add rice, and return chicken to skillet. Cover and bake in oven until rice is done (about 1 hour). Stir in frozen peas and serve.
