Fudge Brownie Mix

2 cups sugar1 cup flour1/3 cup whole-wheat pastry flour1 cup unsweetened cocoa powder2 tbsp cornstarch3/4 teaspoon salt1 cup shorteningFOR BROWNIES1 egg1 teaspoon vanilla1/2 cup chopped nuts or chocolate chips (optional)
Whisk sugar, flour, cocoa, cornstarch and salt in large mixing bowl.
Cut in shortening until mixture resembles coarse cornmeal.
Store in covered container up to 6 weeks at room temperature. Freeze for longer storage.
To make Brownies:
HEAT oven to 350ºF. Spray an 8x8-inch baking pan with no-stick spray.
In large mixing bowl, beat egg and vanilla.
Stir in 3 cups Brownie Mix until nearly smooth.
Fold in nuts or chocolate chips if using.
Spread in prepared pan.
Bake 25-30 minutes.
